「”駅の北側=何もない”は気付いてないだけだった」

「讃岐の香り 石川うどん」店主 石川茂樹さんインタビュー

13分ー注文してから、うどんが出てくるまでの時間。
県内のうどん屋さんの多くがセルフで対応する中、フルサービスでうどんを提供している石川うどんさん。店主の石川さんは「自分が美味しいと思うものを、一番美味しい状態で提供したい」という思いのもと、2009年にうどん屋を始め、のち2014年に丸亀の港町に移転しました。
移転して約5年、お客様と接する中で、それまで全く知らなかったこの町の良さに、日に日に気づいていったという石川さんに、お話を伺いました。


丸亀への移転。立地の不安

こちらのお店はいつ開業されたんですか?

2014年です。開業というか、移転なんですよ。元々は2009年に国分寺(高松市)で始めて、そのあと2014年にここへ移転しました。

丸亀に移転することになったきっかけを教えてください。

あっち(国分寺)でだんだんお客様が増えてきたので、それに合わせて仕込みの為に早く行かなきゃいけなくなったんですね。住まいは丸亀だったので、このままいったら、体力的にもつかどうかが心配になったんです。

なるほど。この場所でしようと思ったのはどうしてですか?

以前このお店は和食屋さんが入ってたんです。たけひろ(土居町)さんって和食屋さん知ってます? 今土器川の側でやってるんですけど、めちゃくちゃ美味しいお店です。当時、たけひろさんがここにあった時、私はお客さんとして来てたんですよ。
で、タイミング良く「出るんやけど、どう?」ってお話しいただいて。それで。

そうだったんですね。じゃぁこのエリアでやりたいとか、丸亀出身だから丸亀市内でっていう希望があったわけではなくて、ご縁があって……ということですか?

そうです。

以前からこのエリアは良く知っていたんですか?

いやいや、たけひろさんに食事に来る以外では、来ること無かったです。やっぱり地元なので……地域地域の雰囲気ってなんとなく分かるじゃないですか。「駅の北側=何もない」そんなイメージしかなかったですよね。釣り具屋さんしかないイメージでした。

だから決めたものの、本当にお客様が来てくれるかめちゃくちゃ不安だったんです。駐車場も無いし……うどん屋で駐車場ないって致命的でしょ。今でこそ目の前の市営駐車場が1時間無料になりましたけどね。

だけど、これも何かの縁やしやってみようかなと、本当にそれだけです。

そんな不安を抱えての移転、オープン当初のお店の様子はどんな感じだったんでしょうか?

たけひろさんのお客様や、当時の国分寺のお客様も来てくれて応援してくれました。あと、うちは化学調味料不使用でやってるので、同じように化学調味料不使用でやってるお店の人が集まってきてくれるんです。たけひろさんもそうですし、大一楼(通町・現在休業中)さんもそうでした。

中でも、くぼさんのとうふ(綾歌郡宇多津町)は1番応援してくれましたね。オープン当初は日に十数人しかお客様が来ない日が続いていたので、くぼさんには毎日話を聞いてもらってました。とても励みになりましたね。

そういった方が1人でもいると心強いですよね。近隣の住民の方との関係もゼロからのスタートだったと思うんですが……

そうです。だから、準備してる時も「どこの人が来たんやろか?」みたいな様子伺いはありましたよ、当然ですけど。

関係性が築けてきたなと感じたのは、オープンしてからどれくらい経ってからですか?

半年くらいかな。近所の人が食べに来てくれて、そしたら「あそこ美味しいよ」って紹介してくれて。ありがたいですよね。あとは、うちは妻が熊本出身なので、まだお客様が少ない時期は、「この辺りの事が分からないんで、教えてください」って、お声かけしてコミュニケーションをとってました。小さな積み重ねですよね。

この町に来て気付いたこと、今でも気付けないこと

移転して約5年が経ちました。この町のイメージは変わらずですか?

いや、「丸亀……いいとこじゃん!」と思いました(笑)
やっぱ気が付かない部分ってあるんですね、ここで働くようになって「丸亀城こんなに人気あるんや!」って思ったし、「観光客こんなに来るんや!」って思いました。
それにびっくりしましたね(笑)

他にどんな事に気付きましたか? この町の良さや趣を感じていることがあれば教えてください。

駅の北側で言うと、太助灯篭とうちわの港ミュージアムですよね。スポットが点在してることで、みんなが歩いてくれるということが分かりました。

丸亀駅に降りると、構内に観光スポットのパンフレットが置いてあるじゃないですか。それを持って、さぁ見るところってなると、やっぱり丸亀城は外せなくて、そのあと太助灯篭、うちわの港ミュージアムになるのかなっていう印象です。だから観光客が通るルートがおよそ決まってる感じは、見ててしますよね。で、その動線上に飲食店がポツポツとあるじゃないですか。点在してることが効果してる感じはありますよね。
これが丸亀城付近だけに集中してたら、こちら側には来てないでしょうからね。

善通寺の赤門筋商店街って分かります? 私はうどん屋を始める前、半年ほど食材の勉強のために、赤門筋商店街にある八百屋さんでお世話になったことがあるんです。

昔は方々に駐車場があって、商店街を歩いてお大師さんにお参りして、また商店街を通って戻っていくっていう人の流れがあったんですけど、駐車場がお寺の近くになったのを機に、その流れが無くなってしまったんです。それで商売にならないもんだから、何件も閉めたことがあったんですよ。それを目の当たりにしてきたので、まさに逆だなという感じです。

逆に、この町のデメリットってどんなところだと思いますか?

どうなんやろう……デメリットね、あるんだろうけど、それに慣れてしまったんかな。気付いてない感じはしますよね。

熊本出身の妻は全然こっちのことが分からないんですよ。だからここに移った当時、私が「ここ大丈夫かな……」とか言ってたのも、全くピンと来ないんですよね。「近くに大きい道路もあるし、車も入れるからいいんじゃないん?」とか言うわけですよ。だけど、こっちに住んでる人からしたら「そういうことじゃない」って、違うって思うでしょ?

まぁ、そうかもしれないですね……

でも、じゃぁ何が違うの? って言われると、明確に答えられないんですよね。確かに人通りも多くはないし、若い人なんていよいよ見かけないです。……魅力がないのか、不便なのか、今一つ分からない。

ただハード面で言うなら、建物の老朽と安全性は改善が必要かなと思います。空き家も多いし、道も昔の港町の影響を受けているから、入り組んでるところも多いですしね。よくそういったことから、新しい建物を建てましょうとか、開発しましょうとか……そんな感じになることもありますが、こういう場所こそ地元付き合いの関係が深いんですよね。それは良さだと思います。開発されてるところは、人の関係が比較的淡泊な感じがあるので。

だから一概に無くせばいいという話でもなくて……新しくこの町と関わる人たちが安心感を得られるようになるといいなと思います。私もそうでしたが、一度中に入れば「大丈夫」と分かることはたくさんあるので。

美味しい時間と町の魅力をお客様へ

今後の展望について教えてください。

とにかくここに来られるお客様には美味しいものを食べて欲しいです。「え、こんなん四国にあったんや!」みたいな感動を提供したいですよね。

こちらに来たお客様に食べてもらいたいものを強いて挙げるとすればなんでしょう?

天ぷらうどんですね。
うどん屋を始める前の八百屋さんでの経験が活かされてるなと思います。どういう野菜があるのかとか、旬の野菜はどれだとか。時期にもよりますが、7~8種の天ぷらが付いてます。あとはデザートとして和三盆、夏場は明石園芸(高松市国分寺町)さんのぶどうを出してるんですが、このぶどうも八百屋時代に知りました。季節になると、ぶどうだけを買いに来るお客様もいてね、とにかくむちゃくちゃ美味しい。毎年30箱くらいは売れるんですよ。うどん屋ですけどね(笑)。美味しいものを提供したいと思う気持ちが強いです。

化学調味料を一切使用しないのも、美味しいものにこだわった結果ということでしょうか?

安心安全という美味しさを提供したいと思っています。あとは食文化を継承していきたいというのもありますね。添加物が一概にダメというわけではないんですが、やっぱりモノの価値っていうのを知って欲しいなと思います。

今の学生さんとか、若い人たちはファストフードが好きな人も多いと思うんだけど、仮に「ハンバーガー屋さんを自分で始めて儲けなさい」って言われたら、「え……これが100円200円では作れないよな」ってことに気づいて欲しいなと思うんです。

でも実際はその金額で売られているからくりに、気づいて欲しいと。

そうそう。それが良いとかダメとかではないんですが、昔は化学調味料とかって無かったじゃないですか。昔からある作り方で作られたものって手間はかかるので、もちろん値段はするけどその分やっぱり美味しいと思うんですよね。だから、昔のやり方のまま出汁をとって化学調味料は使わずに、本来の味を伝えていきたいです。

ありがとうございました。最後に、これからこの町とどう関わっていきたいと思いますか?

お店に来られたお客様にこの町や丸亀の魅力を伝えていきたいですね。

移転してすぐの頃、県外から来られたお客様に「こういうところに行きたいんですけど、どこかありますか?」とか「丸亀城の石はどこから持ってきたんですか?」とか聞かれることが多かったんです。でも、地元なのに答えられないんですよね。それで、すごい勉強しました。お城に登ったり、本島に行ったりして情報を蓄えましたよ。

でもね、まだまだあると思うんです。
金毘羅街道の道中に石の道標みたいなのが立ってるでしょ? 小学生の頃、あれが何なのか分からなくて、調べたことがあったんです。そしたら金毘羅さんまで行く道標だったってことが分かったことがあって。多分あの時に気づかなかったら、調べることも無かったし、大人になったら尚更気にも留めなかったと思うんですよ。そしたら気づかないままじゃないですか。
そうやって気づかないまま見過ごしてるものが、丸亀にもこの町にもあると思うんですよね。だからアンテナ張って、もっと詳しくなりたいです。

美味しいうどんはもちろん、町の魅力もお客様に提供できるといいですね。


とにかく「美味しい」という言葉を連呼していた石川さん。お店で使っている食材の産地の情報にも詳しく、何故美味しいかを熱く説明してくださった姿に、こだわりの強さを感じました。
この5年で地元愛がかなり強くなった様子で、まだその最中にいる感じすら受け取れました。お邪魔する度に新しい町の魅力を教えてもらえそうです。また食べに行きますね!ありがとうございました!

 

”I thought there was nothing on the north side of the station, but I just hadn’t noticed yet.”

An interview with Mr.Shigeki Ishikawa, the manager of ”The aroma of Sanuki, Ishikawa Udon”

Thirteen minutes- It was the time when the Udon noodles were served after we ordered.
At most of Udon restaurants in Kagawa prefecture, they offer self-services. On the contrary, Ishikawa Udon has been serving Udon by providing full-service. The manager Mr.Ishikawa has had ambition ”to serve what I think delicious of the very best condition,” and started an Udon restaurant in 2009. Then, he moved to the port town of Marugame in 2014. It has been five years since he relocated. He has realized day by day the charms of this town, which he hadn’t noticed before by interacting with customers. We asked him about his story.


Relocation to Marugame. The anxiety about the location.

When did you start this business here?

It was in 2014. I didn’t start my business here; I relocated to here. Initially, I began in Kokubunji, Takamatsu; then, I relocated in 2014.

Would you tell me what motivated you to relocate to Marugame?

The number of customers in Kokubunji was rising gradually, so I had to leave home earlier for preparation. I was living in Marugame at that time, and I worried if I could keep doing that physically.

I see. Why did you choose this place?

Previously, there was a Japanese restaurant in this place. Do you know the Japanese restaurant ”Takehiro” in Doicho? The restaurant is operated around the Doki river now, and they serve very delicious dishes. At that time, when ”Takehiro” was here, I was one of the customers. One day the manager asked me, ”We are going to move. Why don’t you move in?” That’s why.

Oh, I got it. Then, it wasn’t because you wanted to, or not because you are originally from Marugame city. It is because you had an opportunity.

Right.

Were you familiar with this area before?

No, I wasn’t. Except when I came to ”Takehiro,” I hadn’t been here. It is my hometown, and I had ideas about every area’s atmosphere. I had an image of this area like ”There is nothing on the north side of the station.” Only a fishing shop came up with my mind.

After I decided to move in, I was still feeling unease if customers would come. Furthermore, there wasn’t any parking lot. For Udon restaurant, it’s critical. Now, we have the city’s parking space for one hour for free.

However, I thought that was meant to happen, so I was trying to do that.

You relocated with the anxiety. How was this restaurant like just after the opening?

The customers of ”Takehiro” and my previous restaurant came and supported us. Besides, some owners of restaurants, which serve no monosodium glutamate like us, also visited. ”Takehiro” and ”Daiichiro” in Toricho were also included in those restaurants.

Among them, ”Kubosan no Tofu” in Utazu supported us the most. Just after the opening, we had only ten or a few more customers each day. Mr.Kubo was listening to me every day, and that means a lot to me.

That sounds really encouraging. I can imagine you also had to build relationships with neighbors.

Exactly. During the preparation for the opening, some people might have wondered like ”Where are they come from?” I think it was natural, though.

After the opening, when did you feel you started building relationships with neighbors?

Maybe after a half year. Some of the neighbors came and ate, then they introduced us to the others, ”It was delicious.” I really appreciate that. Furthermore, my wife is from Kumamoto prefecture, and she asked them, ”I’m not familiar with here, so please tell me about.” and she had communicated with them. It was little by little.

Things that I realized after coming to this town. Things that I still don’t know.

It has been almost five years since you moved in. Do you still have the same impression of this town?

No, it has changed. I realized, ”Marugame, such a nice town!”
There are many charms which I couldn’t notice before. After I started working here, I realized ”The castle is such popular!” and ”There are many tourists like this!” I was surprised by those facts.

What else did you realize? Would you tell me about the charms of this town and the things you feel the quaint atmosphere in this town?

When it comes to on the north side of the station, there are the Tasuke-lantern and the fan port museum. Because those spots are scattered, I realized people are walking around.

You know, there are brochures about tourist attractions at the station. When I look at that and searching for the place I should visit, Marugame castle is must-go; then, the Tasuke lantern and the fan port museum, I suppose. When I observe the route where tourists will go through are usually the same. On the way, some restaurants are scattered. It works well. If there are restaurants only around the castle, tourists won’t come to the north side.

Do you know Akamon-suji shopping street in Zentsuji? I used to work a greengrocer there to learn about ingredients for half a year before I started an Udon restaurant.

A while ago, there were some parking lot around Zentsuji temple. People were coming and going to the shopping street to visit the temple. However, when a parking lot moved to beside the temple, the flow of people was stopped. Some shops on the shopping street couldn’t keep their businesses and closed down. I faced the situation. The opposite situation is happening here.

On the contrary, what do you think is a disadvantage of this town?

Umm, I guess there might be a disadvantage, but I think I got used to that. I haven’t noticed it yet.

My wife, who is from Kumamoto prefecture, didn’t have any idea around here. When we relocated, I said, ” I’m worried about this place.” However, she didn’t understand my concerns at all. She was like, ”There is a big road nearby, so it’s useful for customers with cars, right?”
People who are from around this area like me think, ”It’s not like that.”

I know what you mean.

However, I can’t explain what this area exactly like. There are not so many people on the streets; I rarely see young people. I’m not sure if there are no charms, or if it’s inconvenient.

When it comes to tangible factors, I think improvements of deteriorated buildings and safety are needed. The number of vacant houses raised, and roads are intricate due to the influences of the old port town. By those concerns, people often tend to build new buildings or develop. However, locals in the town have strong relationships. I think it’s strength. In some redeveloped areas, people have weaker relationships.

I’m not against those redeveloping, though. I hope new people who interact with this area feel welcomed. As I experienced, once people start interacting, they will find it will be all right.

Time with delicious dishes and attractions of the town to the customers

Would you tell me about your prospects?

I really want my customers to eat delicious dishes. I hope they will be impressed by our dishes, like ”I didn’t expect these delicious things in Shikoku!”

What do you recommend to your customers, for example?

I recommend the Udon noodles with tempura.
I take advantage of my experiences at the greengrocer. I’ve learned there about many kinds of vegetables and which vegetables are in season now. It depends on the seasons; we serve seven or eight kins of vegetable tempura. As a dessert, Wasanbon(dry confectionery) is included in the menu. In the summer, we serve grapes of Akashi-Engei in Takamatsu as a dessert, which I got to know when I was working the greengrocer. In the season, some customers are coming to buy the grapes only. It’s really delicious. We sell around 30 boxes every year, even though this place is Udon restaurant. I have a strong feeling eager to serve delicious things.

You are committed to serving delicious things, and that’s why you don’t use artificial additives(MSG), is that right?

I would like to serve delicious food with reliable and safe ingredients. Besides, I also want to preserve and pass down food cultures. I don’t oppose all of the food additives, but I want to let people know the real value of things.

Nowadays, many young people and students like fast food. I hope they would notice a fact if they need to start a business of a burger shop and need to make money by themselves, it’s impossible to make a hamburger with a hundred or two hundred yen.

So, you hope people realize the trick why hamburgers are sold with those prices.

Exactly. I’m not saying its good or bad, but you know, we didn’t have MSG or something like that before. Things, which made by the traditional way takes time and effort, so it costs more but tastier, I think. That’s why I will be committed to making soup in a traditional way without MSG. I would like to let people know the essential taste.

Thank you for sharing your thoughts. At the last of this interview, how do you think you would like to interact with this town?

I want to tell the attractions of this town and Marugame to the customers.

Just after we relocated, our customers, who were from other prefectures, often asked me, ”Where do you recommend to visit around here?” ” Where the rocks of Marugame castle came from?” I couldn’t answer those questions, even though I’m a local. Then, I studied so hard. I collected information by visiting the castle and Honjima island.

However, there are more what I need to learn, I guess.
Have you seen some signposts on the road of Kompira pilgrimage? When I was in elementary school, I researched them because I had no idea. Then, I found out those were signposts to Kompira shrine. If I didn’t notice them at that moment, I wouldn’t research them. Especially after I grew up, I wouldn’t take care of them so that I would have never known. Like that, I think there are many other things I haven’t noticed yet in Marugame. I want to keep my eyes open and get to know more.

Not to mention delicious Udon noodles, I want to “serve” attractions of this town to our customers.


Mr.Ishikawa was using the word “delicious” repeatedly in the interview. He knows a lot about the ingredients he uses, and he explained with passion why those are delicious. By his attitude, I felt he took the ingredients seriously.
It seemed that his love for his hometown grew in the past five years, or it may still be growing. He might tell the new attractions of this town every time we visit. I will come again soon. Thank you very much.
